Three Ways to Eat Leftover Pizza

There’s no reason for you to munch on cold leftover pizza in the dark ever again. No matter what time of day or night you decide to snack on some leftover pizza, you can use our ideas to liven up your food. Turn on the lights, take your leftover pie out of the fridge and keep reading to learn three creative ways to eat leftover pizza that will make you wish you had even more leftovers on hand.

1.Pizza Lasagna

If you have some leftover pizza, mozzarella and ricotta cheese, tomato sauce and a baking dish, you have everything you need to make an unforgettable pizza lasagna. To make this dish, pre-heat your oven to 350-degrees. Coat the bottom of your baking dish with a thin layer of sauce. Remove the crust from a few slices of pizza and put two of them in your baking dish so they’re facing up. Cover the slices with more sauce and add some ricotta and mozzarella. Make another layer the same way on top of your base layer.

Cap your second layer off with two more pieces of pizza, but arrange them so they’re facing down. Add some sauce and cheese to the back of these two pieces of pizza. Cover your pizza lasagna with some foil and bake it for 30 to 40 minutes. Remove the foil and continue baking for an additional 10 to 15 minutes until the top layer of mozzarella starts to turn golden.

2. Pizza Fries

The only thing better than French fries made with potatoes are fries made with leftover pizza. To make this simple dish, cut your pizza into thin strips after you remove the crust. Heat some olive oil in a pan, making sure you have enough oil for your strips to be submerged. Once your oil reaches the appropriate temperature — i.e. it sizzles when you put a strip of your pizza in it — put your pizza strips in the oil. Leave your strips in the oil for 2 to 3 minutes, or longer if you’ve put a lot in a single batch. Remove your strips, let them drain on a paper towel and taste how they’ve been transformed after they’ve cooled down a bit. If you have tomato sauce, warm it up to use as a dipping sauce for your pizza fries.

3.Pizza Grilled Cheese

Grilled cheese and pizza are two perennial favorites that are hard to beat when it comes to everyone’s favorite foods, so why not use your leftover pizza to combine the two? To make a pizza grilled cheese sandwich, remove the crust from two slices of pizza. Add some shredded mozzarella or cheddar to the top of one slice and put a second slice on top facing down. Warm a splash of olive oil in a pan over medium-high heat and cook your sandwich for 3-4 minutes on each side. If the cheese hasn’t melted yet, continue to cook your pizza grilled cheese until it does.
